Old Salt
Mostly grapefruit juice, and that’s the point. Nothing gets shaken – you build it, pour it, and let the salt do the talking. The one to make when it’s hot and you’re thirsty.

What you need
Grapefruit juice
then frothed4 oz
then frothed4 oz
Tequila or gin1½ oz
Simple syrup½ oz
Fresh lime juice½ oz
Saline solution2 dashes
Saline solution
1 tablespoon salt into 100 ml water. Stir or shake until it disappears. Keeps forever; you’ll start using it in everything.
How it goes
1Prep the garnish first: cut an oversized grapefruit wedge – bigger than feels reasonable – and salt it heavily. Set it aside.
2Either run the grapefruit through a Breville juicer, rind removed first – it comes out frothy – or juice it by hand and froth it yourself, with a handheld frother or a quick blitz in the blender.
3Combine everything into a shaker (or cup). Do not shake.
4Pour straight over ice into a Highball glass.
5Perch the salted wedge on top.
