Every business has two versions of itself: what it is, and what it’s believed to be. They’re never the same size. When you’re better than you look, somebody else collects the spread – the lender in basis points, the buyer in the multiple. Kansas · Settled Overland Park ### Oh, you want the lore. Fair. This is the page where I stop making you piece it together from recipes and playlists. Short version: K-State grad, “accidental” home-bar owner, spreadsheet whisperer who increasingly just builds the software the spreadsheet was standing in for, and – since 2023 – some of y’alls neighbor. Four years of learning things on purpose and a few things by accident. Go Cats. Junior year A bar opens out of my room. The Hum. It started as “I have bottles and you have a Tuesday” and got out of hand in the best possible way. It never really closed. After that The work finds me. Turns out the brain that obsesses over a cocktail spec also obsesses over spreadsheets – and then over the code underneath them. I started making businesses look as good as they are: models, systems, and more and more the software itself, sites and internal tools I actually build. The unglamorous stuff, done carefully. 2023 Historic Overland Park. Moved into the neighborhood and immediately overcommitted: a farmers market, a vibrant community, and the loveliest liquor store in the world, all within a few blocks. Now You’re caught up. Potlucks on the driveway, shelf tags at The Bottle Shop, playlists for grooves I haven’t met yet. The second glass is chilled. The part where it’s secretly one job At a desk I make businesses look as good as they are – and work as well as they look. Behind a bar A good drink is mostly an excuse to stay a little longer. People ask which one is the real one. Both. It’s the same move: pay attention to people, sweat the details, make the thing that matters. One ends in an invoice, the other ends in a nightcap. My favorite days end in both. Sometimes guests are looking for guidance on what to order, other times they’re simply curious about my personal favorites. I like to answer all sides of the question at once by sharing a few favorites from the menu and introducing guests to different spirits, techniques, and styles they may not have tried before. But at the core, I don’t have a singular favorite drink to make. What I love most is crafting something that leaves a guest not only delighted in the moment but also excited to explore the world of cocktails. How it goes 1 · Salt half the rim of a rocks glass if you want it – half, so you get a choice with every sip. 2 · Shake everything with ice until the shaker hurts to hold. About 15 seconds. 3 · Strain over fresh ice. Big cube if you please. 4 · Lime wedge or a dehydrated wheel on top – roll the wedge in equal parts sugar and salt if you’re feeling it. What you need Grapefruit juice then frothed · 4 oz Tequila or gin · 1½ oz Simple syrup · ½ oz Fresh lime juice · ½ oz Saline solution · 2 dashes Saline solution 1 tablespoon salt into 100 ml water. Stir or shake until it disappears. Keeps forever; you’ll start using it in everything. How it goes 1 · Prep the garnish first: cut an oversized grapefruit wedge – bigger than feels reasonable – and salt it heavily. Set it aside. 2 · Either run the grapefruit through a Breville juicer, rind removed first – it comes out frothy – or juice it by hand and froth it yourself, with a handheld frother or a quick blitz in the blender. 3 · Combine everything into a shaker (or cup).
